        Welcome to The Minnie Victoria Bed and Breakfast. This little Victorian house was built in 1895 and offers you the ultimate in a Bed and Breakfast getaway.

        The Minnie Victoria is located on the east side of Jim Thorpe with plenty of off-street parking and privacy. Furnished through out with antiques, the rooms have an elegance that speaks of years gone by.

        This is the perfect place to celebrate your romance with that special someone.

        Welcome to The Minnie Victoria B&B.  The Minnie Victoria was established in 2000 by Carol Landis.  I was fortunate to purchase The Minnie V in 2004 and she is not only a bed and breakfast but my home.  My career has been in Human Resources but I have always had the "dream" to own a bed and breakfast.  Since 2004, I can actually say that I am living my dream! 
        I want all of my guests to feel at home at The Minnie Victoria as they are very special and are treated as such. They are guests in my home and I want everyone to feel welcome. 
        I will be updating my website often with specials and requested recipes.  Oh, did I mention that I love to cook and bake?

        Many of you have asked for recipes. I will start adding recipes to this site often. Here is the recipe for The Cake That Doesn't Last.
        The Cake That Doesn’t Last

        3 cups flour                                        3 eggs

        2 cups sugar                                       1 ½ cups vegetable oil

        1 tsp baking soda                               1 tsp vanilla        

        1 tsp salt                                            One 8 oz can crushed pineapple (drained)

        1 tsp cinnamon                                   2 cups mashed ripe bananas

                                                                  1 cup chopped walnuts (if desired)

        Preheat oven to 350 degrees. Grease and flour a 10 inch Bundt pan. 
        In a large bowl, mix flour, sugar, baking soda, salt and cinnamon.  Make a well in the center of the dry ingredients.  Add in the well your eggs, oil, vanilla, pineapple, mashed bananas and chopped walnuts.  Mix well and pour into prepared pan.
        Bake in preheated oven for 75 minutes (my oven only takes 55-60 minutes) or until a toothpick inserted in the center of the cake comes out clean.

Skirmish USA has award winning paintball fields including The Tippman Castle. Mauch Chunk Lake provides swimming, boating, fishing, or just relaxing on the sandy beach. Beautifully designed Penns Peak features local and national music performers playing everything from country to classic rock, and there are also performances at the Opera House. It truly is an area that can accommodate your every desire.
